Baked eggplants with mushrooms and pepper


— 2 small eggplants
— 250-300 gr of champignons
— 2 red peppers
— 1-2 cloves of garlic
— 100 gr of cheese
— 100 ml cream
— salt, pepper, greens

Oven put warm up to 180-200 degrees.

Eggplant cut into cubes / rectangles and soak in salt water for 15 minutes. At this time, cut the mushrooms and fry them in a small amount of oil in a frying pan. Pepper cut into squares. If desired, peppers can also be fried. In a frying pan heat a couple of tablespoons of oil, squeeze out the garlic and put the squeezed eggplants. Fry eggplant with garlic for 7-10 minutes.

In the baking dish put the first layer of eggplant. Salt and pepper a little. The second layer is pepper. Again add salt, pepper. Then mushrooms. If the mushrooms are not salted during roasting, then salt them now. Cream mixed with chopped or frozen greens, you can add some favorite seasonings yet. Pour the cream with vegetables and sprinkle with grated cheese.

Bake for 30-40 minutes. Ready dish can be sprinkled with herbs.
