Baked pork

— 1.5 kg of pork with bone (ham)

For marinade:
— 1 onion
— 2 cloves of garlic
— 2 tablespoons of vinegar
— 1 tablespoon of honey
— spicy chili paste or chili pepper
— salt pepper

For garnish:
— 500 g of small potatoes
— 500 g of small carrots

— a bunch of parsley
— 1 clove of garlic
— 1 lemon peel

Garlic to pound, mix all the ingredients for marinade, grate the meat.

Cut the onions into rings, lay them under meat and over meat. Close tightly, put in the refrigerator for several hours (you can overnight), periodically turn the meat in the marinade.

Peel the onions and marinade from the meat, put the meat on a baking sheet or large frying pan, put in the oven 220 ° C for 15 minutes.

Pour the meat with the extracted juice, pour the marinade on the baking sheet (without onions, only liquid), reduce the oven temperature to 200 ° C and bake for another 15 to 20 minutes.

Spread around the meat of small cleared potatoes, stir so that it is greased from all sides with fat and meat juice, bake until half-ready for 15 minutes.

Add carrots to the potatoes, mix with juice and butter, bake for 20 — 25 minutes.

Do not forget to water the meat every time. Check the readiness of meat near the bone. If light juice flows, without redness, take the baking tray out of the oven, cover with foil, leave for 15 minutes.

During this time, prepare the thresher: chop parsley and garlic finely, grate the lemon zest on a small grater, mix everything. Before serving, sprinkle meat and vegetables with gremolata.
