Cold boiled pork — cook at home


Pork (you can take a piece of skin and subcutaneous fat) — 1-2 kg.
Mayonnaise — 3-4 tablespoons.
Garlic — 2-3 wedges
Spices to taste (I used rosemary, dill seeds, bay leaf and ground black pepper)


1. Soak pork in a saline solution (3-4 tablespoons per 1 liter of water) and leave in the refrigerator for 2-3 hours (you can leave it for the whole night)

2. Extract the meat from the brine and rub it with spices. I used dried rosemary, dill seeds, bay leaf and ground black pepper.

3. Nashigigovyvaem meat with garlic, for this we cut garlic with thin plates, with a sharp thin knife pierce the pork deep inside and insert the plates of garlic into the resulting holes.

4. Put a large piece of foil in the fire-resistant bowl, and prepare the meat on it. Cover the meat on top with a thin layer of mayonnaise (I used a quick home mayonnaise) and wrap the meat with foil.

5. Bake in the oven at a temperature of 200 degrees. In my case, a fillet weighing 1.6 kg baked exactly 2 hours. For 15-25 minutes before the end of baking, I recommend to open the foil so that the top of the fillet is browned.
