Pechenka is a product that is not loved by everyone. Appetizing liver pancakes in a gentle sour cream sauce will help you to change the idea of ​​a liver once and for all if you have not yet fallen in love with it.


— flour — 5 tablespoons,
— eggs — 3 pcs.
— beef or pork liver — 500 g,
— 1 teaspoon of soda (slaked vinegar),
— garlic — 3-4 cloves,
— sour cream,
— milk — 50 grams,
— parsley or dill,
— salt, pepper to taste,
— olive oil.


Rinse the liver, cut into pieces, pass through a meat grinder or use a blender.
Finished mince put in a bowl, add to it milk, soda, eggs, flour, salt and pepper. Stir until homogeneous.
Pour the frying pan with olive oil and put on a moderate fire. Using a tablespoon, put the liver mass on a frying pan. Fry the pancakes to a gently golden crust and transfer them to a paper towel (so that excess fat is absorbed).

Prepare the sauce for pancakes: chop the garlic, finely chop the greens. Take a small bowl, mix sour cream, garlic and herbs in it.

Allow the pancakes to cool down, and then combine them in pairs, having missed in the middle with sour cream sauce. Put the «double» pancakes in a dish, decorate with greens.
