Pancakes with chicken and mushrooms recipe

Today I want to share with you a recipe for pancakes with chicken and mushrooms. For the first time, we tried these pancakes when we were vacationing in Bulgaria. There, on the ancient streets of the town of Pomorie, we came upon a small family restaurant, the owner and hostess of which sat directly on the street and invited the hungry tourists to come and dine or have supper in their institution. These elderly people fascinated us so much that we could not refuse them. Having tried them with these pancakes, we have repeatedly been there in the aftermath. And the recipe for pancakes was taken on board. Try to cook and taste them and you … All ingenious is simple!

Ingredients:

For pancakes:
2 cups of flour,
2 eggs,
3 cups of milk,
0.5 part of a spoonful of salt,
100 gr. Butter (can be vegetable).

For filling:
1 chicken breast,
500 gr. Champignons,
1-2 bulbs,
1 carrot,
1 egg,
vegetable oil.

Preparation:

The first step is to prepare the filling for our pancakes. Chicken breast boil and cool in broth. Onions cut into cubes, carrots on a grater and wess them until half ready. Add the cut champignons to the vegetables and fry everything until ready, salt and pepper. The fillet of the breast is detached from the bones, cut and added to the vegetable-mushroom mixture, mixed, add 1-2 tbsp. Spoons of vegetable oil, we take it together for a couple of minutes, remove it from the fire, cool it a bit and add the raw egg, mix it. The filling is ready.

Now let’s make pancakes. To test the eggs, mix with salt, sugar, some milk, pour in flour, mix thoroughly so that there are no lumps, then dilute the remaining milk, pouring it gradually. If the lumps still could not be avoided, the dough can be passed through a sieve. Then fry the pancakes in a heated frying pan on both sides. Further we stuff them with stuffing, turn off the envelope and before serving serve a little frying in vegetable oil, so that the filling inside warms up once more, tk. There is a raw egg, which serves for the «bunch» and juiciness of our «stuffing», and it is worth preparing.

We serve our pancakes with sour cream.
