Ingredients: (for 15-20 pancakes)

For the test:

Flour — 155 g
Milk 250 ml
Water 125 ml
Baking powder — 1 tsp.
Yeast — 1 tsp.
Sugar — 1 tbsp.

For filling:

Cheese hard — 100 g
Fresh mushrooms — 200-300 g
Onion — 1 pc
salt pepper
Gt; Chicken oil


The first step is to prepare the dough.
Activate the yeast. Dissolve sugar and yeast in warm water, stir and leave for 10 minutes at rest.
After 10 minutes pour in the yeast mixture warmed milk
And pour the sifted flour and baking powder
Mix whisk until uniform. The dough will turn out rather liquid.
Leave it for 20 minutes.


Fry lightly onions, and then add chopped mushrooms, salt, pepper
Fry for 15 minutes (until the liquid is ready or evaporated)
Grate the cheese on a fine grater

Reheat the frying pan well beforehand without lubricating it (this is mandatory!).
In the center we pour 2,5 st. L. Test.
Fry until the pancake is covered with holes, and its surface is not dry.

We shoot the pancake from the fire (you know how I shot it? I just padded the edge with a shoulder blade, and then with my hands pulled neatly and the edge and took off the pancake from the frying pan).
Fry the pancakes so thoroughly from the whole dough, but do not add them to each other, so that they do not stick together (when they cool, you can already stack on each other).
On the reverse side, they should not be too fried, so adjust the fire on the stove
I’ve even adjusted myself to three at once to fry, but I advise you to do it one by one, so they get round. It is possible on two frying pans

I got 20 pancakes (the number depends on the diameter and thickness, very thin or very thick do not do it)
Now let’s start wrapping.
In the center of the pancake we put 1 tbsp. L. Mushroom filling
Top of the damp

We protect the edges of the pancake from one side almost to the middle.
Then the second side and the third as in the photo. The edges are glued together well, the main thing is not to dry them in a frying pan

So we stuff all the pancakes. Then add them to the baking tray and into a hot oven at 180C for 10 minutes, so that the cheese melts.

Served with sour cream
They can be made with any filling: with minced meat, vegetables, julienne, rice and mushrooms, with cabbage, potatoes, jam, cottage cheese, custard …
