Pears in a chocolate-almond cloud


pear (ripe) — 3 pcs.
chocolate bitter — 100 g
Butter — 60 g
sugar — 130 g
eggs of chicken — 2 pcs.
almond flour — 60 g
lemon juice — 1 tbsp.
baking powder — 10 g
cognac — 2 tsp.


1. Peel the sweet sweet pears, remove the core.

2. Cook pears for 7-10 minutes on a small fire, adding 50 grams of sugar and lemon juice to the water.

3. Bitter chocolate melt in a water bath with butter.

4. Beat 2 protein with a pinch of salt, gradually adding about 50 grams of sugar. Beat up to a dense texture of protein mass.

5. In a separate container, beat 2 yolks and 30 grams of sugar. Sugar add to taste. I do not like sugary sweet pastry, so this amount of sugar for me was quite enough. Add chocolate mass, 2 teaspoons cognac (optional) and almond flour mixed with baking powder. If you do not have almond flour, you can ground on the coffee grinder dried in the oven almonds. Stir well and gently introduce proteins. Stir by the method of folding, as if writing a spoon to a figure eight.

6. Lubricate the forms with butter. Fill them up to half of the chocolate-almond mass.

7. Put pears in the center of each form.

8. Bake at 170-180 degrees for about 25 minutes. Important! Forms must be placed in a preheated oven.

9. The consistency and taste of this pear-chocolate-almond dessert resembles a chocolate fondant.
