For the test:

Flour 300 gr.
Butter100 gr.
Eggs 5 pcs
Sugar 50 gr.
Salt 0.5 tsp.
Water 250 ml.

For filling:

Milk 1 liter.
Eggs (yolks) 5 pcs.
Flour 100 gr.
Starch 1 tsp
Sugar 100 gr.
Salt 0.5. Ch.

Preparation of Profitroles with custard:

At the beginning of the preparation, let’s do the test. To knead the dough, you need to put the butter on the frying pan and melt it. After that, pour water into the frying pan, add sugar, salt and wait for the water to boil. After that, turn off the gas and gradually pour in the flour. In the battered test there should not be a single lump.

While the dough cools, into a separate bowl we break the eggs and whisk. Now let’s put the eggs into the dough. Fill them with a thin trickle, stirring the dough with a spoon in circular motions. The dough should turn out to be liquid, as in the photo.

It’s time to turn on the oven. While it will be warmed up, we will be engaged in the formation of profiteroles.
The baking tray, on which our cakes will be baked, is covered with special paper. Over spread the dough. For this you can use a special confectionery syringe or a regular tablespoon.

In the oven heated to 220 degrees, we send a pan with profiteroles. After 20 minutes, reduce the temperature in the oven by 40 degrees and wait another 10 minutes.

We extract the profiteroles from the oven and let them cool down. At this time, prepare the cream for the filling.

Separate the yolks and beat them with sugar. We fall asleep with starch and flour, we mix and salt. We heat the milk. As soon as small bubbles begin to appear on the surface of the milk, remove it from the fire and pour it into a saucepan with eggs.
Mix the ingredients and put them on the fire. Constantly stirring, watch the moment when the cream starts to be brewed. Filling for profiteroles is ready!

We fill the filling inside the profiteroles using a confectionery syringe. If you do not have it, try using a medical one.
Finished profiteroles with custard are cooled and we can drink tea!
