Snack Peacock’s Tail

-300 gr. Eggplant
-200 gr. Small cucumbers
-150 gr. Small tomatoes
-150 gr. Cheese
-2 cloves of garlic
-salt, mayonnaise
-vegetable oil

1.Baklazhany cut into obliquely, rings 1 cm wide. Sprinkle with salt, mix and leave for 15 minutes to secrete liquid.
2. Then the eggplant should be thoroughly washed and dried with a towel. A little salt and roll in flour on one side. Turn over and roll in flour on the other side.
3. Squeeze with vegetable oil warm up well, put the eggplant and fry until golden brown. Turn over and fry the other side also until golden brown.
4. Wipe the cheese on a medium grater.
5. Add mayonnaise, garlic, squeezed through a press, mix everything.
6. Cut the cucumbers diagonally, thin rings.
7. Tomatoes and black olives are also cut into thin rings.
8.On the aubergines, put the cheese stuffing.
Decorate with slices of tomatoes, cucumbers and olives.
Finished eggplants lay out in the form of a peacock’s tail on a large dish.
